Garlic is a specialty crop that is part of the allium family (along with onions, leeks and shallots); along with adding tremendous amounts of spice and flavor to recipes, garlic provides numerous health and medicinal benefits. Garlic has been shown to reduce a consumers number of sick days, and contains many micronutrients (including vitamin B6, vit C and manganese) with almost no calories. Garlic has also been shown to help reduce elevated blood pressure and the amount of “bad” cholesterol (LDL) in the blood. Just be sure to bring a toothbrush for after you eat a garlic-rich meal!
This is an easy dish that my kids love! You can simply dump all ingredients into a large sheet pan and bake in the oven. No boiling potatoes, no precooking corn, no water, no draining. This one also makes it super easy for kids to learn their way around the kitchen.
