Apples are a speciality crop that boast a whole host of health benefits. 1 medium apple is under 100 calories, and provides 4 grams of satiating, gut-friendly fiber. They also have a high water content, which, when paired with the 4 grams of fiber may be beneficial towards healthy weight goals. The specific type of fiber found in apples is called soluble fiber – soluble fiber not only promotes normalized GI function but may also help regulate cholesterol levels in the blood.
I started making this couscous salad with whatever I could find around the house! All the ingredients are fresh and the only thing that really needs to be cooked is the couscous itself (~10min). I've made different versions of this based on what I could find, and this is my favorite one so far!
